Victoria Atao and Eudis Orosco manage their farm in harmony with nature, preserving old forest trees and following traditional Inca agroforestry methods that align agricultural practices with lunar cycles. Their approach fosters a diverse ecosystem and enhances the quality of their coffee. On their farm they manage two separate plots of Geisha coffee varieties, each producing distinct flavour profiles - Eudis favouring fruity notes and Victoria a cleaner, crisper cup. These Geisha Inca varieties, once overlooked due to low yields, are now thriving under their care at higher altitudes. Their work, rooted in Inca heritage, is strengthened by communal farming traditions, which emphasise shared labor and collective refinement of techniques.

The Incahuasi Cooperative, made up of farmers who share Inca ancestry, promotes sustainable agroforestry through expert guidance and organic farming practices. Regular maintenance such as pruning, composting, and irrigation supports healthy growth in the region’s unique mountainous terrain. The coffee harvest, occurring from September to December, is among the latest in Peru due to the valley’s high altitude and isolated climate. While some natural coffee is produced, most of the crop undergoes fully washed or dry honey fermentation, reducing environmental impact and enhancing quality. After a meticulous drying process at 1900–2100 meters, the coffee is stored and graded at a stable, high-altitude facility, ensuring exceptional quality for each batch.
