The flavours and complexities that coffee processing can produce is pretty amazing. We strive to always have at least one coffee in our portfolio that pushes the boundaries with flavours and aromas through experimental processing / various fermentation methods.
For many years now we have been sourcing coffee from Colombia through Azahar. We really admire their approach of improving the livelihood of producers and they are the driving force of the Specialty Coffee Transaction Guide.
At 430 kilometers from the capital city of Bogota, Planadas is a hidden gem located in the southern region of Tolima, Colombia's coffee landscape. Nestled in the foothills of the Central Andes are ideal conditions for cultivating exceptional specialty coffee, thanks to its high altitudes, fertile volcanic soils, and microclimates. Planadas is home to a community of dedicated coffee growers, many of whom are committed to sustainable and organic practices. These growers produce beans with complex flavour profiles, characterised by vibrant acidity and rich sweetness. The region's commitment to quality and innovation has earned it a reputation as one of Colombia's premier coffee-growing areas. Today, the strength of the regional economy is driven by its coffee production.
The coffees in this blend were grown by producers from various municipalities, with farms located between 1,560 and 1,780 meters above sea level. After carefully hand-selecting ripe Castillo, Caturra, and Colombia cherries, the coffee underwent an 80-hour anaerobic fermentation, followed by 80 hours of mechanical drying to ensure uniform flavours. Finally, the cherries were milled, revealing beans that often display a yellowish hue due to the natural process. The resulting coffee offers a clean, well-rounded cup with a smooth mouthfeel, stewed fruit notes, a lactic brie-like flavour from the fermentation, and a boozy finish reminiscent of red vermouth.
