Lala Salama comes from the Oromia Coffee Farmers Cooperative Union - a farmer-owned collective representing thousands of smallholder growers across Ethiopia’s Oromia region, one of the world’s most celebrated homes of high-altitude Arabica.
To gently remove the caffeine, this coffee undergoes the natural ethyl acetate decaffeination process, often known as the sugarcane method. The green beans are lightly steamed, then carefully washed with spring water and naturally derived ethyl acetate - a compound found in fruits and sugarcane. This selectively removes the caffeine while preserving the coffee’s structure, sweetness and character.
After decaffeination, the beans are steamed once more to remove any remaining traces of EA, then slowly dried back to their original moisture content.
The process is intentionally gentle. Only water and naturally derived ethyl acetate come into contact with the coffee, allowing the cup to retain everything we love about Ethiopian Arabica: softness, clarity, sweetness and depth - just without the caffeine.
The result is warm, clean and quietly expressive, with notes that feel complete rather than compromised. Another delicious decaf with sweet and savoury buttery notes reminiscent of shortbread, a creamy cashew nuttiness and black tea mouthfeel.
