This coffee was produced by Salma Jazmín Cortés Posadas and her mother Gema in Totutla, Puebla, Mexico. Our Head of Coffee, Mars, first met Salma three years ago through the Cup of Excellence program where Salma’s mother Gema competed and placed second. They have since continued to meet at the yearly Women-Powered Coffee Summit by Bean Voyage in Mexico. Coffee has been woven into Salma’s life since birth: as a proud third- and fourth-generation coffee grower, she draws inspiration from her parents and grandparents, who taught her the value of hard work, respect for the land, and the joy of learning through coffee.
For Salma, each stage of coffee production is deeply meaningful. Her happiest times are during the harvest, when she works side-by-side with family members experimenting with new fermentation methods and processing techniques. The most rewarding moment comes when they gather to taste the fruits of their labor - the culmination of a year’s dedication, love, and teamwork. These shared experiences not only strengthen family bonds but also reflect her belief that coffee is far more than a business: it is a passion, a way of life, and a source of peace and pride.
Her journey hasn’t been without obstacles. Labor shortages, caused by local migration to the U.S. and Canada, have challenged her family’s production. In response, they turned to specialty coffee and competitions to access more profitable markets, improving wages and living standards for their community. Their deep-rooted traditions continue to shape their work - bringing coffee seeds as offerings to the church and hosting celebratory gatherings at the harvest’s end. Looking ahead, Salma dreams of producing the best coffees in her region, gaining global recognition, and ensuring her family’s legacy thrives through innovation, quality, and connection with coffee lovers around the world.
This coffee comes to us via Falcon, our long-term import partners. For the more adventurous coffee drinker, we always include at least one offering that pushes boundaries through experimental processing or fermentation methods. This coffee has been Honey processed and we've roasted it on the lighter side to highlight its delicate sweetness and floral complexity. It tastes like bright lychee and fragrant hibiscus up front, followed by layers of dried berries and gentle herbal spice. The cup has a juicy, tea-like body with a citrus acidity. As it cools, subtle notes of sun-dried tomato and warming spices emerge, giving it a complex, lingering finish.
